A warm dish to suit all tastes

Sometimes a healthy helping of comfort food is exactly what takes your holiday to the next level! Northland home cook Susan Garcia has just the dish for that. Her corn casserole is a cinch to throw together and can be customized to any preference easily–vegetarian, vegan, or ominivore. It also doubles well to feed a large crowd. Try it out with your Thanksgiving meal this year!

 

Susan Garcia’s Corn Casserole

1 Box of Jiffy Corn Bread mix

4 eggs beaten 

1 can of evaporated milk

1 cup of sour cream 

2 15 oz cans of corn or the equivalent amount of fresh corn

2 tsp of Spike seasoning or Mrs. Dash. If using a salt free seasoning mix, add a dash of salt as well

Optional add ins: 

1/2 cup of diced ham, red peppers, shredded cheddar cheese, or diced onion. 

Directions: 

Preheat oven to 350 degrees. Mix all ingredients together in a 9 by 13 inch pan. Bake for 45 minutes.

Every pet will be lingering at the tableside hoping for a dropped morsel or two but human food that has a lot of spice is typically not suitable for our pets. Instead, set aside some plain steamed vegetables like green beans or carrots, along with some poached chicken or turkey. Certain aromatics can be detrimental to animal digestion so leave the onion and garlic out and just let your kitty or puppy enjoy the unseasoned flavor of meat itself. They will be just as appreciative.
